Crockpot Enchilada Chicken
4-6 frozen chicken breasts
1 container of green or red salsa (I prefer green)
1 can 99% fat free cream of chicken soup
Dump all ingredients in the Crockpot on low for 8 hours; cook only 4-6 hours on low if chicken is already thawed.
Shred chicken when done
Optional – add chicken to a bed of lettuce, tomato, avocado and black beans to make a taco salad…
